Oven Baked Green Rice

Yield: Serves 6-8


1 small onion, minced
3 Tbsp. olive oil
2 cups long grain rice
31/2 cups chicken broth
1/4 cup green onion, sliced
1/4 cup cilantro, chopped
2 Tbsp. basil leaves, chopped
2 Tbsp. Italian parsley leaves, chopped
1 Tbsp. mint leaves, chopped
1 ea. jalapeno pepper, seeds removed, minced


Oven Temperature: 500-550 degrees

  1. Combine the onions and oil in a baking dish.
  2. Flame Height: 3.2
  3. Place the dish in the center of the oven for 5 minutes or until the onions are softened. Stir in the rice and cook for 2 more minutes, stirring once.
  4. Remove and stir in the rest of the ingredients. Cover tightly with foil.
  5. Flame Height: 2.6
  6. Bake just inside the doorway for 15-20 minutes or until the liquid has been absorbed and the rice is tender. Remove from oven and let sit for 5 minutes. Fluff with a fork before serving.
